Who says salads need to be just a side dish? These main course salads are made to satisfy:

*Spicy chipotle chicken taco salad

*Greens, apple, candied walnut and blue cheese salad

*Butternut, kale, and Israeli couscous salad with cherry vinaigrette

*Chicken satay noodle salad with creamy coconut-peanut dressing

JoAnne is a graduate of the California Culinary Academy. Since moving to Maine, she has worked as a professional pastry chef and owned a dessert catering company, as well as teaching cooking classes. Her classes are designed to be hands-on but are also perfect for those who may wish to just observe. The class always makes every item listed and everyone gets to sample. JoAnne advises students not to eat dinner before coming to class because there is so much food! Each student will receive a full print-out recipe packet to take home!

 

Maine Driving Dynamics

A Bureau of Highway Safety course aimed at improving a student's defensive driving awareness and abilities. The 5-hour course includes discussion of collision avoidance techniques, safety issues, driver habits and attitudes and the basic elements that constantly challenge drivers on Maine's highways. The course format engages participants with a mixture of lectures, videos, and class discussion and participation. Upon completion, students will receive a 3-point credit on their driving record. Some insurance companies give discounts after completing this course, so check with your company for details. Makeup class (if needed) 12/11/18. Note: Fee: Under age 65 - $40.00; age 65 and over - $25.00. Online registration is not available for the senior discount; please call our office at 664.7110 to register.

Students will be provided with the tools and skills needed to create, format, and use basic spreadsheets, learn the various methods of entering data, editing data, using formulas for everyday calculations, creating charts and graphics, filter and sort table data, and work with pivot tables. By the end of this course, students will be able to use Excel with confidence to meet the expectations of most employers. No class 11/23/18. Makeup class (if needed) 12/14/18.

Prerequisite: MS Word or equivalent knowledge (see description for MS Word).

Students will be given an overview of the different features of Microsoft Word and be provided an opportunity to use the skills to produce real-life professional looking documents. Documents include developing resumes and CVs, creating merge documents, making invitations and all-occasion cards, designing flyers, printing envelopes, etc. Other skills covered are typing with efficiency, formatting, editing, document spacing, altering margins, page numbering and saving/organizing documents. By the end of this course, students will have attained the knowledge that is expected by most employers. Makeup class (if needed) 11/02/18.

 

Mindfulness: Tools for Well-Being

Drawing from the areas of Stress Reduction, Mindfulness, Brain Science, and Resiliency, this 4-week series will explore specific tools and practices we can use to enhance our level of well-being and flourish in life. Topics to be included are reducing stress in a busy world, increasing awareness, presence and intention in our lives, as well as rebounding from adversity and strengthening relationships. Makeup class (if needed) 11/14/18.

Jen Harry is a mindfulness and meditation teacher committed to helping people manage stress and live mindfully and meaningfully. She has a BA in Psychology and has worked in the mental health field for over 15 years. She is certified in methods Japanese Psychology, Applied Positive Psychology, and has attended trainings for facilitating Mind-Body Skills Groups. Jen is the founder/owner of Infusion Mindfulness.

 

Mindfulness: Mindful Eating Series

Explore the intersection of mindfulness, eating behaviors and our relationship to food. Learn about the physical, emotional, and environmental factors that can influence food decisions and eating patterns by exploring the seven types of hunger with the goal of increasing our awareness and learning how we can use mindfulness to help us establish a new, more balanced relationship with food. In addition, learn the science behind willpower and learn strategies for increasing self-regulation and resisting temptation. Finally, we will focus on how food impacts our body and how to make tiny, yet powerful, tweaks to our diet that can increase our overall well-being. No class 02/20/19. Mixed Levels Hatha Yoga (Session 1)

Mixed Levels Hatha Yoga uses traditional poses and conscious breathing to relieve stress from a busy life. Proper alignment is the focus of this class which is designed to build body awareness, flexibility, and strength. Put your well-being first in this all-level Hatha yoga class that allows each individual to adapt the practice to their needs.

Hannah Horecka was trained in Hatha Vinyasa Yoga at ShivaShakti School of Yoga in Camden, Maine. She has been practicing yoga for over 13 years and owns Quiet Strength Yoga Studio in Ellsworth. Her teachings are focused on proper alignment and body mechanics to heal and strengthen every body.
